Recognising the growing number of people diagnosed with coeliac disease and gluten intolerance, Pat has placed gluten-free dining at the centre of his menu development. “We don’t believe gluten-free diners should have to compromise,” says owner Paul O’Donnell. “Our aim is to ensure guests have as much choice as everyone else. It’s not often you‘ll find a place with top drawer cuisine AND as many GF options.”

The result is a menu that offers everything from comforting British classics to globally inspired dishes. Starters include crispy pork cheek bites served with honey BBQ sauce, roasted croquettes packed with butternut squash, chillies and coriander, halloumi fries with sweet chilli dip, and lamb roulade stuffed with mint and served with salt and vinegar sauce. The main menu continues to impress with dishes such as pan-fried salmon served with Lyonnaise potatoes, cockles, mussels and samphire, a 12-hour braised lamb shank with bone marrow mint gravy, traditional Lancashire hot pot, overnight roasted pig cheek with udon noodles and kimchi, full racks of cola and pineapple pork ribs, butternut squash and coconut risotto, and signature burgers.

Sunday lunch has become something of a local institution. Guests can choose from perfectly cooked sirloin of Aberdeen Angus beef, roasted chicken breast, marsh-fed leg of lamb, ham or a red lentil and fennel roast, all served with the traditional accompaniments. The Sunday roasts have become so popular they sell out almost every week.

One coeliac customer became emotional after being served a fully gluten-free Sunday roast complete with a gluten-free Yorkshire pudding. “She actually cried,” recalls owner Paul. “She told us she hadn’t been able to enjoy a proper roast dinner with a Yorkshire pudding for years. Moments like that remind us why it’s so important to make our menu as inclusive as possible.”

The restaurant has also recently launched what is proving to be one of the area’s best-value bottomless brunches. Available Monday to Saturday, guests can enjoy three small plates alongside 90 minutes of unlimited cocktails and beers for just £35, or upgrade to include premium Spritzes and Prosecco for £45 — great value and not restricted to certain times.

Behind the bar, master cocktail barman Matty has developed a collection of signature cocktails exclusive to Twelve Sixty, alongside a refreshing range of handcrafted Spritzes that perfectly complement the food menu.
