At the heart of its growing reputation is Head Chef & General Manager Joshua Parry’s commitment to quality and freshness. A perfectionist with unwavering passion, Joshua has created a refined menu that champions locally sourced produce. Every dish reflects a dedication to flavour, seasonality and craftsmanship, with ingredients sourced from trusted suppliers just a stone’s throw away.

Joshua explains: “One of the standout partnerships we have is with C M Triggs Fishmongers, located over the road. This proximity allows the kitchen to serve exceptionally fresh seafood. Taking this a step further, I sometimes join them on fishing trips to catch ingredients that feature in the following day’s specials. It’s a level of involvement that few restaurants can claim and it’s been great to be part of the whole process from the sea to the table.”

He continued: “We have produce from A I Roberts Butchers who are known for their premium cuts of beef, pork and chicken — ensuring that every plate meets the highest standards of quality. We source soft, rich brioche buns from Tuille Bakery, while fresh breads come courtesy of Born To Bake. These partnerships add an extra layer of local authenticity and elevate even the simplest dishes.”

The kitchen itself is small, with limited storage space — a constraint that has become one of the restaurant’s greatest strengths. By necessity, Mr Smith’s Parlour operates with fresh, short-life ingredients, ensuring that everything served is at its peak. For diners, this means consistently high-quality dishes and a menu that evolves with what’s available locally.

Complementing the food is an impressive drinks offering. Fine wines are sourced from Majestic Wine, while the cocktail menu features carefully curated creations unique to the venue rather than the standard cocktails you’ll find anywhere. Each drink is designed to pair seamlessly with the food or stand alone as part of the speakeasy experience. Despite only being open a few weeks, the feedback has been incredible.

One diner recently described the dishes as ‘art on a plate’, telling Joshua: “We are bringing friends from Cambridge in a few weeks to join us for your amazing food! We’ve told them all about your expertise when it comes to delivering art on a plate! We can’t wait to see you again soon!”

Another reviewed: “Second visit and was not disappointed again. The food is very good, quality exceptional, all sourced locally too. Our party had the prawns, they were lovely, great portion size too. Also the tuna, cooked to perfection, the halloumi slices were very nice, as were the padron peppers. For main courses, I had their burger, again, cooked to my liking, so fresh too.”

They continued: “The fish and chips were nice, with fresh local fish.” The steak ciabatta, again, cooked just right. Our server was Matty, he was great, engaging, fun, and very professional, offering recommendations based on his experiences of the food.”

Mr. Smith’s Parlour has also created a local charity partnership as the business is supporting local men’s mental health initiative, Tattoos And Tears. On the last Saturday of every month the charity hosts walk and talk groups and the restaurant provides free food and a safe space to talk and connect prior to the venue opening to the public.
