Known for revitalising food-led venues across London, Spain and Italy, Simposium now brings its expertise to the Wirral. Behind Simposium are directors Antonio Cannavacciuolo and Miki Coluccia, two hospitality professionals whose combined expertise has shaped and elevated restaurants across Europe.
Antonio (Operations Director) specialises in culinary direction, kitchen planning and operational structure, while Miki (Marketing Director) brings a strong background in marketing strategy, branding and front-of house systems, with a particular focus on driving visibility and strengthening market presence.

Under Simposium’s guidance, the kitchen team has reimagined the Sunday Roast and introduced a more refined ‘Gastro Pub Food’ identity. The renewed focus is on high-quality comfort dishes, homemade elements, carefully sourced ingredients and consistency – an approach that reflects the consultancy’s proven success across Europe. “We’re working towards offering one of the best Sunday Roasts in the Wirral,” said Antonio Cannavacciuolo.
Beyond the menu, Simposium is supporting improvements throughout the guest journey: front-of-house service, staff training programmes, dining room ambience and operational flow.
