MEET THE HEAD CHEF BEHIND HOYLAKE’S ‘5 STAR’ SUNDAY ROASTS!

A chef who lived through apartheid South Africa as a child and lost his father when he was 10 years old has worked his way up from dishwasher to a supremely talented Head Chef and creator of ‘5 star’ Sunday roasts. Darryn Jones, Head Chef at 21st Amendment in Hoylake, has been taking the town by storm with his culinary creations — serving up ‘unbelievable’ small plates and ‘first class’ Sunday roasts.

The new speakeasy style restaurant and bar has been extremely popular since opening in The Quadrant in Hoylake. One of the key reasons for its success is the quality of food and drink — with an incredible kitchen team and locals raving about the small plates and Sunday roasts.

The kitchen team was selected by Sam Creedon — the local award winning master chef with a Michelin background. Sam had mentored Darryn Jones at other restaurants, so when he was tasked with creating a kitchen team for 21st Amendment he immediately contacted Darryn to become Head Chef.

Sam said: “When I was given the task of selecting the kitchen team at the new venue, Darryn was my first choice for Head Chef. He’s worked for me for years and he’s an amazing chef — thoughtful, creative and highly skilled. The new menu has gone down a storm and we’ve been getting fantastic feedback and reviews.”

Darryn, who had a challenging upbringing in Durban, South Africa, started out as dishwasher under Sam over 10 years ago. He followed Sam avidly, learning everything he knew about Michelin quality cuisine, and worked his way up at The Portrait House and The Quadrant until he became Head Chef at Monte Carlo for 5 years.

Darryn, 36, explained: “I’m really proud of how far I’ve come — from dishwasher to Head Chef at a really high quality new eatery in Hoylake. I was born and raised in apartheid South Africa and that really shapes you as a person — it was horrible to grow up with and very traumatic as a young child watching the violence but it’s made me really strong and hard working.”

He continued: “England has been really good to me and it’s felt like coming home as my father who passed away on Father’s Day when I was 10 was originally from Liverpool. I’ve worked very hard since coming here but I owe so much to Sam Creedon for sharing all his knowledge with me and I also owe a lot to my girlfriend Emily who’s always believed in me. If it wasn’t for them I wouldn’t be where I am today.”

Darryn was given creative freedom when recruited as Head Chef of 21st Amendment and has put together some exquisite dishes on a refined menu. Small plates include the likes of sticky chilli jam and honey pork belly, black tiger prawn tempura and Cheshire cheddar and leek croquettes and the Sunday roasts, in particular, have been a massive hit!

Sunday roasts at 21st Amendment include slow roasted Welsh lamb shoulder studded with garlic and rosemary, confit pork belly brushed with honey and Maldon sea salt with puffed crispy crackling or Shropshire free range chicken roasted with Tarragon and lemon butter. There are also nut roasts available and a limited amount of beef tomahawks.

Such is the quality of the food, customers have been rating it ‘5 star’ on Facebook — with some quoting it as ‘unbelievable’, ‘amazing’ and ‘first class’. The specialist wine list has also been met with high levels of praise. The Sunday roasts, in particular, have been a big hit due to their intriguing twists.

Darryn summarized: “As a child I had to witness apartheid South Africa and lost my father on Father’s Day but I feel I’m now in a really good place. I’ve worked my way up from dishwasher and listened to everything Sam taught me — it feels great now to be reunited with him and selected by him as Head Chef here. There’s a saying I’ve come up with, ‘re-inventing the meal’, and that’s what I’m striving to do at 21st Amendment.”

He continued: “It’s a great honour to serve the people of Hoylake and get creative with my dishes. We’re always rammed on Sundays as there’s live football followed by live music in the evenings but I like working under pressure. We have a great kitchen team here and we all work well together and it feels amazing to get 5 star reviews from our customers.”

21st Amendment offers a refined menu of small plates available Mon-Sat, ranging from £3.50 to £8.50, and some mouth watering desserts — with occasional specials. The high end Sunday roasts are available every Sunday. The venue also offers live sport, live music Fri-Sun and quiz nights on Thursdays.
