Joe Ainscough, aka ‘The Kirkdale Kid’, was once a highly prolific champion boxer from Liverpool, competing at a high level and winning a National ABA Light Heavyweight Title in the process. In 2015 his direction in life took an abrupt change when he discovered the benefits of eating vegan and organic and he has since become a pioneer for organic food in Liverpool.

As a boxer, Joe developed a formidable reputation as ‘The Kirkdale Kid’, leading to him having 14 professional fights. He has fought against top boxers such as Kenny Egan, Tony Jeffries and Courtney Fry, with his legendary fight against Mick Witty at Everton Park still being talked about today (Joe won on points despite being knocked down twice).

Joe’s boxing career ran alongside his successful tiling and construction company, but in 2015 he had an epiphany. Joe always understood the importance of taking care of his body and once he started looking into organic food, he never turned back and decided to help others live healthier lives too — leading to him opening his organic café, Tranquil Evolution.

He explained: “The more I looked into food, how its processed and the ingredients, the more I realised I needed to make a change in my diet. I first went vegan in 2015 but over the last year I’ve decided to go purely organic and now include eggs, pasture raised chicken, grass fed beef and tinned mussels for B12. Since bringing these foods back into my diet again I feel much stronger and healthier overall.”

He continued: “After years of tweaking my diet and opting for primarily organic, I opened Tranquil Evolution with my business partner, Chris, in February 2020. We offer quality, fresh organic food that makes you feel great — you can really taste the difference between organic food and stuff full of chemicals. We source our meat from the Rhugg Estate in Wales who serve many Royal Families worldwide, so we only offer the best produce. We’re the only fully organic café/restaurant in the North West and it’s been really popular since opening.”

Since opening earlier this year, Tranquil Evolution has been a huge success — offering a dine in service and a meal prep takeaway or delivery service. An organic diet is all about eating fresh, tasty food that’s free from toxins, steroids, chemicals, genetically modified crops and factory farming.

Talking about the lifestyle, Joe told us: “I can’t emphasise enough how eating more consciously will change your life. As a former athlete, I advise exercising regularly and taking part in yoga, not smoking, keeping your alcohol to a minimum and eating quality organic food. The food we supply people with is fresh and clean and people who come here keep coming back. It’s a way of life.”
